ISLE OF WIGHT
We offer a blue (200g) and soft cheese (160g) made from pasteurised Jersey and Guernsey cow's milk. The blue is a naturally rinded soft cheese with blue veins. This is sold at 3-5 weeks of age and has an 8-week shelf life. The soft fits nicely in between the brie and camembert brackets. This is sold between 2-4 weeks of age and has a maximum 9 week shelf life.
Hilliards work with two producers in the New Forest and Basingstoke. We offer a lightly smoked (1.5kg), Old Winchester (18 months; 1.5kg), Lyburn Gold (3 months; 1.5kg), Rosary ash (275g), Tunworth (250g) and Barkham Blue (1kg). The Tunworth is handmade from pasteurised cow's milk. Barkham Blue has a rustic rind and deep yellow colour that's spread with dark blue veins.
Cheese from the only producer in Surrey - right on our doorstep! They rear their own herd of Friesian cows on the north downs and make 2 semi-soft unpasteurised cheeses called Norbury Blue (1.3kg) Dirty Vicar (700g).
Three gorgeous cheeses from the High Weald Dairy. The St Giles (900g) is a semi soft creamy cheese similar to Port Salut. The Brighton Blue (900g) is a semi soft with a mellow blue flavour. The Sussex Slipcote (100g) is a ewe's milk cheese in plain, garlic & herb, cracked black peppercorn and dill.
Burwash Rose (650g) is an unpasteurised cows milk washed in rose water. Olde Sussex (850g) is deep, rich and creamy - a true ploughman's cheese. Lord of the Hundreds (1kg) is an unpasteurised ewe's milk cheese with a hint of caramelised hazelnuts. Lord London (550g), made with pasteurised milk, has a creamy texture. Mayfield (1kg) is a hard pasteurised cow's milk cheese with nutty undertones. Sussex Blue (1.5kg) is a mild creamy blue cheese.
